
Wheat Apple-Nut Bread

Ingredients
- 1 1/2 Cups Einkorn Flour
- 3/4 Cup Almond Flour or all Einkorn Flour
- 1 Tablespoon Baking Powder
- 1 teaspoon Salt
- 1 teaspoon Ground Cinnamon
- 1/2 teaspoon Baking Soda
- 2 Eggs, lightly beaten
- 1 Cup Unsweetened Applesauce
- 6 ounces Plain low-fat Yogurt (2/3 cup) or an Avocado
- 1/4 Cup Honey
- 1/3 Cup Olive Oil
- 1 Cup chopped Pecans, Black Walnuts, or Hickory Nuts
- 1/3 Cup Cranberries or Cherries or Figs
Instructions
- Preheat oven to 350 Degrees F.
- Grease the bottom and 1/2 ich up the sides of two 8x4x2-inch Loaf Pans and set aside.
- In a Large Bowl combine Flours, Baking Powder, Salt, Cinnamon and Baking Soda. Make a well in center of Flour mixture and set aside1 1/2 Cups Einkorn Flour, 3/4 Cup Almond Flour or all Einkorn Flour, 1 Tablespoon Baking Powder, 1 teaspoon Salt, 1 teaspoon Ground Cinnamon, 1/2 teaspoon Baking Soda
- In a Medium Bowl, combine Eggs, Applesauce, Yogurt (or and Avocado), Honey, and Oil2 Eggs, lightly beaten, 1 Cup Unsweetened Applesauce, 6 ounces Plain low-fat Yogurt (2/3 cup) or an Avocado , 1/4 Cup Honey, 1/3 Cup Olive Oil
- Add Egg mixture all at once to Flour mixture. Stir just until moistened (Batter should be lumpy)
- Fold in Nuts and Cranberries or Cherries or Figs and then Spoon Batter evenly into prepared Pans .1 Cup chopped Pecans, Black Walnuts, or Hickory Nuts, 1/3 Cup Cranberries or Cherries or Figs
- Bake for 40 to 45 minutes or until a Wooden Toothpick inserted near centers comes out clean. Cool in Pans on Wire Rack for 10 minutes.
- Remove from Pans and cool completely on Wire Rack.
