Preheat oven to 350 Degrees F.
Grease the bottom and 1/2 ich up the sides of two 8x4x2-inch Loaf Pans and set aside.
In a Large Bowl combine Flours, Baking Powder, Salt, Cinnamon and Baking Soda. Make a well in center of Flour mixture and set aside
1 1/2 Cups Einkorn Flour, 3/4 Cup Almond Flour or all Einkorn Flour, 1 Tablespoon Baking Powder, 1 teaspoon Salt, 1 teaspoon Ground Cinnamon, 1/2 teaspoon Baking Soda
In a Medium Bowl, combine Eggs, Applesauce, Yogurt (or and Avocado), Honey, and Oil
2 Eggs, lightly beaten, 1 Cup Unsweetened Applesauce, 6 ounces Plain low-fat Yogurt (2/3 cup) or an Avocado , 1/4 Cup Honey, 1/3 Cup Olive Oil
Add Egg mixture all at once to Flour mixture. Stir just until moistened (Batter should be lumpy)
Fold in Nuts and Cranberries or Cherries or Figs and then Spoon Batter evenly into prepared Pans .
1 Cup chopped Pecans, Black Walnuts, or Hickory Nuts, 1/3 Cup Cranberries or Cherries or Figs
Bake for 40 to 45 minutes or until a Wooden Toothpick inserted near centers comes out clean. Cool in Pans on Wire Rack for 10 minutes.
Remove from Pans and cool completely on Wire Rack.
