
Egg Drop Soup

Ingredients
- 1 Tablespoon Coconut, Avocado, or Extra Virgin Olive Oil
- 1 small thinly sliced Onion
- 2 1/2 Cups Unsalted Chicken Bone Broth
- 1 teaspoon Oil
- 1 teaspoon Soy Sauce or Coconut Aminos
- 1/2 teaspoon Black Pepper
- 4 Large Eggs, beaten
- 1 medium Scallon Green Onion thinly sliced. green and while parts only.
Instructions
- Heat the Oil in a 3-quart Saucepan over medium to medium-heat. Add the Onion and cook until but not starting to brown, stirring occasionally1 Tablespoon Coconut, Avocado, or Extra Virgin Olive Oil, 1 small thinly sliced Onion
- Add the Chicken Bone Broth, Oil, Soy Sauce or Coconut Aminos, Black Pepper, and bring up to a simmer.2 1/2 Cups Unsalted Chicken Bone Broth, 1 teaspoon Oil, 1 teaspoon Soy Sauce or Coconut Aminos, 1/2 teaspoon Black Pepper
- Slowly add the Large beaten Eggs while stirring with a Wooden Spoon.4 Large Eggs, beaten
- Transfer two Serving Bowls and top each with Scallion, serve1 medium Scallon Green Onion thinly sliced.
