
Roasted Acorn Squash w/ Orange-Cranberry Glaze

- Cookie Sheet
- Casserole Dish
- saucepan
Ingredients
- coating Olive Oil
- 1 Acorn Squash, peeled, seeded, and diced
- sprinkle Salt and Pepper
- 1 1/2 teaspoon Cornstarch
- 1/2 Cup Orange Juice
- some Honey add to your taste
- 1 1/2 Tablespoon Dried Cranberries
Instructions
- Pre-heat Oven to 400 Degrees F
- Oil a Casserole Dish
- put diced Squash in and sprinkle with Salt and Pepper
- Roast for 30 minutes
Sauce
- In a small Saucepan add Orange Juice, Cornstarch and Honey.
- whisk over medium heat until thick and shiny.
- Add Cranberries pour over roasted Squash and toss.
