Roasted Acorn Squash w/ Orange-Cranberry Glaze

  • Knife
  • Cookie Sheet
  • Casserole Dish
  • saucepan

Ingredients
  

  • coating Olive Oil
  • 1 Acorn Squash, peeled, seeded, and diced
  • sprinkle Salt and Pepper
  • 1 1/2 teaspoon Cornstarch
  • 1/2 Cup Orange Juice
  • some Honey add to your taste
  • 1 1/2 Tablespoon Dried Cranberries

Instructions
 

  • Pre-heat Oven to 400 Degrees F
  • Oil a Casserole Dish
  • put diced Squash in and sprinkle with Salt and Pepper
  • Roast for 30 minutes

Sauce

  • In a small Saucepan add Orange Juice, Cornstarch and Honey.
  • whisk over medium heat until thick and shiny.
  • Add Cranberries pour over roasted Squash and toss.
