
Supercharged Cherry-Almond Cookies

Ingredients
- 1 Cup EinKorn Flour
- 1 Cup Almond Flour
- 1/2 teaspoon Sea Salt
- 1/2 teaspoon Baking Soda
- 4 Tablespoons Coconut Oil
- 1/3 Cup Honey
- 1 Large Egg
- 1/4 Cup Unsweetened Applesauce
- 1/2 teaspoon pure Almond Extract
- 3/4 Cup dried Cherries or Figs
- 3/4 Cup sliced natural Almonds
Instructions
- Preheat Oven to 325 Degrees, line 3 Baking Sheets with Parchment Paper
- in a Medium Bowl combine EinKorn Flour, Almond Flour, Salt, and Baking Soda. set aside.1 Cup EinKorn Flour, 1 Cup Almond Flour, 1/2 teaspoon Sea Salt, 1/2 teaspoon Baking Soda
- in a Large Bowl beat Batter with Honey and Oil until creamy1/3 Cup Honey, 4 Tablespoons Coconut Oil
- Beat in Egg, Applesauce and Almond extract.1 Large Egg, 1/4 Cup Unsweetened Applesauce, 1/2 teaspoon pure Almond Extract
- Stir in Dry Ingredients until combined then stir in Cherries and Almonds3/4 Cup dried Cherries or Figs, 3/4 Cup sliced natural Almonds
- Spoon Dough by heaping teaspoons onto prepared Baking Sheets, 2 inches apart.
- Bake 15 minutes until golden and let cool for 2 minutes.
Notes
- Add 1/2 teaspoon Baking Soda for every Cup of Honey
- If more than 1 Cup of Honey reduce liquids by 1/4 Cup per 1 Cup Honey
